What's not to love about Oprah?? She's funny, relatable, driven, giving and so much more. I admire her. Her latest cookbook, which I was sent a copy to review, Food Health and Happiness -115 on-point recipes for great meals and a better life,is gorgeous! It's a work of art really.

In the cookbook, Oprah weaves in intimate photos, stories and in my opinion some fantastic recipes. The soup section of the book is impressive. Oprah offers fresh, vibrant salad recipes as well as entrée options. Most recipes are simple, yet elegant and well thought out in terms of balance.

This is a really nice cookbook and a great read as well. I see quite a number of recipes with bright flavors I want to make, which I have to say hasn't happened in a while for me when flipping through a cookbook. Check it out, you can see a preview of the book as well.

FAQs

What is the difference between New York cornbread and southern cornbread? ›

While both styles generally use the same ingredients -- cornmeal, flour, eggs, and baking powder -- the variance lies in the flavor and texture. Northern-style cornbread tends to be sweeter, moister, and cake-like compared to its Southern counterpart.

Why does my homemade cornbread fall apart? ›

Cornmeal gives cornbread its classic color and flavor, but too much can make your bread crumbly. Try replacing a little bit of cornmeal with flour. The specific measurements will depend on how much cornmeal and flour is in your recipe, but you should try to have more flour than cornmeal in your batter.

How do you keep cornbread from being dense? ›

Add in some Flour

If you use straight cornmeal, it will tend to be dryer. Adding in flour will help to keep the cornbread moist. I like to use a 50/50 ratio of cornmeal to flour in my recipe. I feel this gives a moist and fluffier texture.

Why isn't my cornbread moist? ›

Extra Butter: To keep the cornbread moist and buttery, unwrap one end of a stick of butter and run it over the top of the baked cornbread while it is still hot. The butter will seep into the bread, adding extra moistness and flavor. Serve warm with butter and a drizzle of honey.

Why do southerners not put sugar in cornbread? ›

The most common theory is a change in cornmeal itself. Until early in the 20th century, Southern cornmeal was made with sweeter white corn and it was water-ground. When industrial milling came along, that changed. The steel-roller mills used yellow corn that was harvested before it was ripe, so it had less sugar.

Which makes better cornbread, white or yellow cornmeal? ›

Southerners, on the other hand, tend to prefer white cornmeal. Many people believe that it is because, in the old South, families used white cornmeal as it more closely resembled “fancy” European wheat flour. In any case, today it remains a main component in traditional Southern buttermilk cornbread.

Should you let cornbread batter rest? ›

1Preheat the oven to 400°F (204°C). We recommend allowing cornbread batter to sit for 10 to 15 minutes before baking, so if you prefer, you can delay heating the oven until you make the batter. 2Melt the butter, and then set aside to cool slightly.

How to make cornbread less crumbly jiffy? ›

  1. 1Put in an extra egg yolk. ...
  2. 2Cut back on fat or grease by one third. ...
  3. 3Replace white sugar with a moist sweetener. ...
  4. 4Add 1 tablespoon (15 ml) more butter or oil. ...
  5. 5Replace milk or water with creamed corn. ...
  6. 6Add 1 tablespoon (15 ml) of sour cream.

Can you over mix cornbread? ›

Pour batter into prepared pan. The batter will be lumpy. Overcome the urge to mix until smooth. Overmixing can cause the corn bread to peak and have tunnels, resulting in a tough texture.

What is the best cornmeal for cornbread? ›

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

Should you soak cornmeal before making cornbread? ›

Soaking the cornmeal in buttermilk for a few hours, or even overnight, tenderizes the large grains of cornmeal, making the bread more moist and tender. This step is optional, however, and the bread is still delicious without the soaking step.

What happens if you use water instead of milk in cornbread? ›

Can I substitute water for milk in cornbread mix? Yes, you can, but it may result in a less rich flavor. If you're out of milk, try using cream or half-and-half, evaporated or powdered milk, or even plain yogurt. If you have dietary restrictions, try soy milk or oat milk.

What ingredients keep cornbread from being dry? ›

Using brown butter gives more flavor, and we're removing that excess water, which will help in preventing gluten formation, maintaining a tender texture. And lastly, adding sugar, which is not traditional, adds a bit of sweetness. and also maintains moisture and tenderizes.

Why does my cornbread always fall in the middle? ›

While not a professional chef, my experience with corn bread, be it packaged or made from scratch is if you over mix it, it's gonna fall!

What is the difference between Yankee and Southern cornbread? ›

Northern cornbreads tend to be more cake-like, on the sweet side, with a finer crumb due to more flour in the mixture. Southern cornbread is flavored with bacon grease, and cooked in a cast iron skillet, a perfect side for barbecues, or chili. It also tends to be rather crumbly.

What's another name for Southern cornbread? ›

Corn pones are a staple of Southern U.S. cuisine and have been discussed or referenced by many American writers, including Mark Twain.

Is Southern cornbread sweet or savory? ›

Real, traditional, Southern-style cornbread is savory, not sweet, and always has been.

Is Southern cornbread good for you? ›

That whole-grain status yields an impressive nutrition profile: One half-cup of cornmeal has almost 5 grams of protein and 4.5 grams of fiber. Considering a typical serving of cornbread prepared from a mix (which often includes wheat flour), that translates to about 4 grams of protein and 1.5 grams of fiber per slice.
