Tips for making feta and beet salad

  • I used 3 cups of diced cooked beets. This was enough for 4 people when served as a side. If you decide to add more ingredients (such as arugula, spinach, nuts, etc …) you will get a larger portion that should feed more than 4 people.
  • You can use more/less feta if you like. Just remember that this Greek cheese is quite salty, so I recommend you season this beet salad at the very end – after you have mixed everything together and more importantly before you tasted it. You don’t want to end up with an over-seasoned salad.

What makes beets taste better? ›

Roasting beets deepens their natural sugars while tempering bitterness. Bake whole, wrapped beets at 400°F for 60-75 minutes until easily pierced by a fork. Allow to cool before peeling and juicing. Incorporating roasted beets creates a smoother, mellower, almost nutty-flavored blended juice.

Should you rinse feta cheese? ›

Feta dries out quickly when removed from its brine, so always store feta in the brine it is packed in (we do not recommend buying precrumbled “dry” feta). One final note: It's a good idea to rinse feta packed in brine just before serving to remove excess salt.

Are you supposed to melt feta cheese? ›

While a blast of heat from your oven will not fully melt your feta cheese, it will transform it into a warm and luscious, creamy spread. Absolutely addictive! To serve it, all you need is some crusty bread, or better yet, some homemade pita chips!

How do you cook beets from raw? ›

Fill a pot about 3/4 full with water and place beets inside. Bring to a boil. Once water is boiling, cook beets for about 20 minutes to 30 minutes. I would test a smaller and larger beet for tenderness at the 20 minute mark by either removing and cutting or piercing with a fork.

Do you have to peel beets before cooking? ›

Sometimes beets are peeled before cooking. They may also be scrubbed and cooked until tender with their skins on; the skins slip off fairly easily after cooling. (Some people are happy to leave the skins on; they are fine to eat.) You can also pickle cooked beets.

How do I know when beets are done cooking? ›

Boil Beets: Boil smaller beets for 20 minutes and larger beets for up to 40 minutes. You'll know the beets are done boiling when they can be easily pierced with a fork or knife. Drain beets in a colander or remove from water with a slotted spoon. Peel Skin: Rinse beets under cool water to peel the skin.

How long does it take beets to reach full size? ›

Beets should be ready to harvest 7 to 8 weeks after they are planted. Young, tender tops often have a mild quality, but the greens can be used until they get large and strong flavored. Young plants can be cooked with the root and top together, or you can use the root alone when it is the size of a golf ball or larger.
